In 2013, when my then-fiancé and I were planning our wedding, friends and family weren’t surprised when we decided to make and/or bring in every possible detail. At that point, I had been making coconut dream bars for a few years, occasionally bringing a batch to holiday and family parties. I really had no idea what I was in for when we decided that they would make the perfect wedding favor for our guests. Our guestlist hovered around 140 people, and I had never baked for that many people before. Two days before our wedding (I wanted them to taste fresh!), I took over my mother’s kitchen with the help of a few of my bridesmaids. We baked about twenty-four trays of dream bars, cut them all up and popped them into mason jars with cute bows. While it was labor intensive and exhausting, I have no regrets because they ended up being the talk of the wedding (aside from my dress and the beautiful venue, duh). I had never made something so universally liked.
To this day, seven years later, friends and family talk about those dream bars, often asking for the recipe. But I kept it secret (never really knowing why?!), and I’m glad I did because now I can share them with you in this way. Hope you enjoy.
